“West of Eden” is a limited release collaboration with Ross Halligan, the brewer at Southpaw BBQ. Here's Aaron at Tag + Jug describing it, "For this special release, Ross and I pulled first running’s of Barleywine wort from the mash tun and blended it into Cabernet Franc French Oak barrels with raw apple cider juice. The blend was then co-fermented and aged for three months before kegging/bottling unfined and unfiltered. West of Eden has a rich amber color with aromas and flavors of ripe apple, raisins, and butterscotch that frame a full-bodied cider with a crip and lingering finish."

Apples are among the most genetically diverse fruits on the planet. Each seed contains a unique genetic code such that if you plant it, the fruit from the ensuing tree will be nothing like that of it’s mother. Traditionally, American hard cider was made from native apples trees that were considered too bitter to eat on their own. Most old time cider was not sweet, but rather emphasized the bright and brilliant natural acidity in these apples. Many dry ciders are aged in oak barrels and taste great both still or carbonated.
