The first time I ever brewed a Kolsch, a guy from the birthplace of Kolsh--Cologne, the city on the banks of Germany’s Rhine River--came by the bar and said "Really good!" Well, since Hopsy customers aren't all from Cologne, we've added a touch of some classic American Liberty Hops to this sudsy drink, so it is not exactly "to style", but this straw-colored ale does use an ale yeast at lager temperature, brew-speak for how we get the yeast accentuating hop flavor and bitterness while creating crisp, clean lager like character. After fermentation, Kölsch is treated like a lager in a process called conditioning, yielding a quaffable pint, lightly hopped with delicious Liberty Hops. Prost!
